There is something very satisfying about having done all the
hard work in advance, knowing that all you have to do to complete a meal is put
a little salsa together or transfer ready-to-cook brochettes from the
refrigerator to the grill rack. When time is on your side, take the opportunity
to steep basil in oil, make bold aji Amarillo
marmalade or prepare a chili-and-herb grilled polenta, then put aside to let
the flavors improve and develop. Corn smeared with chipotle chili butter and
wrapped in its husk, or lamb in a rosemary-scented marinade will both benefit
wonderfully from a few hours resting. While they do so, you can relax -safe in
the knowledge that it will all taste and smell superb once it's sizzling away
