This is food for fun, to enjoy and impress. Ingredients are sometimes extravagant, but they may also be as simple as grilled sausages. Occasionally it is the setting that is just as much the star attraction as the dishes, as when lobster is served by the pool or damper skewers are cooked over the fire on the beach. The cockle and seafood bake is not something for under the pier at any holiday hot spot, but suggests a hidden cove with pebbles, seaweed and tinder-dry flotsam. A trip too far? Set the scene with silver sand and stones from the garden centre, arranged in an old steel wheelbarrow, then order the seaweed and seafood from the fishmonger.
