Strawberries and marshmallows on cherry wood spikes
It is always a treat to have permission to eat marshmallows.
After cooking, dredge these little kebabs with loads of icing sugar, some of
which will melt into the strawberry juice. The grill has to be very hot to sear
the marshmallows quickly before they have a chance to melt.
Prepare the barbecue. If you are using cherry wood skewers,
soak them in water for 30 minutes. When the coals are hot or with a light
coating of ash, lightly oil the grill rack and position it just above the coals
to heat. Spike two marshmallows and two strawberries on each drained cherry
wood or metal skewer and grill over the hot coals for 20 seconds on each side.
If nice grill marks don't appear easily, don't persist for too long - cook
until the marshmallows are warm and just beginning to melt.
Transfer the skewered strawberries and marshmallows to
individual dessert plates or a large platter, dust generously with icing sugar
and serve.
